Cherry is a hardwood with a fine, straight grain that ranges from reddish-brown to blond.
The heartwood is a light pink when freshly cut, cherry wood will darken with time and sunlight.
Maple is a hardwood with fine textures and a light and even grain. The sapwood is white to cream and the heartwood has a reddish hue. Figured maple wood can have a distinctive pattern of grain with dark brown or black markings.
Walnut wood is hard, heavy, and resilient, capable of resisting warping and has rich dark colors and attractive grain patterns. The grain is irregular but typically straight with a medium texture. The endgrain is semi-porous with distinct growth rings.

Edge grain cutting boards are typically tougher than a face grain board. They may also be thicker than face grain giving the board more weight and body.
Face grain boards may show knife marks faster than edge grain but, face grain boards typically have the most grain and often are the most striking of all cutting boards.
